When we brew koji, we use raw soy sauce instead of salt water.  The time and effort of brewing the soy sauce in two stages and maturing it makes it rich and mellow.


  • We use two-stage brewing soy sauce, which is made by brewing soy sauce with raw fried bean curd, to give it a rich flavor and fullness in a very sweet taste.
