This light, dry junmai-shu combines the richness of junmai-shu and the sharpness of junmai-shu by fermenting the malt for a longer period of time than normal brewing. The sake is brewed by Yonetsuru Shuzo, a company that practices "sake brewing starting from rice cultivation" and polishes "Dewa Kirari" produced in Yamagata Prefecture to 65%
